4 tablespoons soy sauce 4 tablespoons chicken oil  400 g fresh noodles, cooked until tender, drained  150 g Chinese mustard greens, cut into 3 cm pieces, blanched  9 meatballs, boiled

4 tablespoons cooking oil  8 kaffir lime leaves  2 bay leaves  2 lemongrass stalks, smashed  300 g chicken breast fillet, diced into 1 cm pieces  600 ml water  1 teaspoon cornstarch, dissolved in a little water

Seasoning Sauce, Mix Well

3 tablespoons sweet soy sauce  1 tablespoon oyster sauce  1 tablespoon soy sauce  1 teaspoon granulated sugar  ½ teaspoon ground pepper  ½ teaspoon salt  ½ teaspoon chicken bouillon powder

Spice Paste, Grind

50 g shallots  6 cloves of shallots  4 cloves of garlic  4 cm turmeric, roasted  4 candlenuts, toasted  2 cm ginger, roasted  2 cm galangal  1½ teaspoons coriander seeds, toasted

Garnish

Fried shallots, as needed  Sliced scallions, as needed  Bird's eye chili sauce Broth

Topping: Heat cooking oil, sauté the spice paste, kaffir lime leaves, bay leaves, and lemongrass until fragrant.

How To Make

Preparation time: 45 minutes

Add the chicken, stir until it changes color. Add the seasoning sauce and water, stir again until well combined. Cook over low heat until the chicken is cooked and the flavors are absorbed.

Add the cornstarch solution, cook until thickened. Remove from heat, set aside.

Prepare 4 serving bowls. In each bowl, add 1 tablespoon of soy sauce and 1 tablespoon of chicken oil. Add the noodles to the bowl, mix well with the seasonings.

Top with the sautéed chicken mixture and a little broth. Add Chinese mustard greens and meatballs as desired. Serve immediately with the garnishes.
